Potato Chips-Kyla Style

When I had pancreatitis, the dogtor told me I had to be on a low fat diet for the rest of my life. The pancreas processes fat, he said. Restricting me from eating anything does not sit well with me. We did come up with Kyla Chips. You take a sweet potato, peel it and use a mandolin to make thin slices. If you don’t have a mandolin, a guitar might do in a pinch. Put the slices in a 350F (175C) on parchment paper on a tray and put into the oven. After about 10 minutes, turn the slices over and give it 8 more. You’ll get the hang of the time depending on how thin you slice the potato. You use no oil, no seasonings, no salt, no anything. Here’s my Kyla Chip tray

  12. Oh Boy! I like the sound of those. I’ve already pestered Mama to make me some of these. She makes the biscuits that I eat with my dinner so She won’t mind making me some Kyla-Crisps. Yummmmmmmy can’t wait. RooOOooodles!

    • They’re healthy. I’m forced to do the no-fat thing-but you aren’t. If you don’t think about the healthy and just enjoy them, you’ll be fine.

  13. I have no mandolin or guitar – Mrs. Weisenheimer used an egg slicer. Now we have no chips but we will buy a new egg thingy tomorrow and try it again :o)

    • You’ll get used to me and then I’ll change. I won’t be a 10.5 year old curmudgeon for long. I turn 11 at the end of the month and then I’ll really do it right.

    • Kaci is part Westie (we don’t know how much but she has Westie fur) and she loves them.The problem is Him, He slices things unevenly and we use our judgment about when individual chips come out.

      Unfortunately, Kaci doesn’t share Kenzie’s love of the pool and swimming. I loved my buddy Kenzie and I also love my new white dog. We should have been a trio.
